PEA & LETTUCE SOUP
1 onion chopped
1 lettuce washed and broken into rough chunks
500g frozen baby peas (can use minted peas)
3 cups chicken stock (make it fairly strong, about 4-5 cubes in the 3 cups of water)
2 tablespoons chopped chives for garnish (can use parsley, coriander etc)
300ml cream (optional)
Boil ingredients in saucepan until peas are barely cooked. Cool a little and vitamise until smooth. Add salt, pepper and if necessary more stock to thin and juice of ½ lemon (adjust to taste).
The recipe calls for 300ml cream to be added at this stage. It is fine without any additive, but soy milk could be used to make it creamier.
May be served hot or chilled, garnished with chives and perhaps a snow pea or two.
