HUNGARIAN APPLE PIE Pastry 225g plain flour 125g butter a little caster sugar 1 egg yolk a little cream (or milk) Filling strawberry jam 75g ground almonds 75g caster sugar 1 egg white 450g pureed apples Mix egg yolk with a little cream. Combine butter and sugar in a blender until smooth, add mixed egg yolk and cream. Mix in flour. Blend until mixture forms a ball. Wrap in cling wrap and place in the refrigerator for 20 minutes. Grease a 20cm loose bottom flan tin. Roll out ½ of the pastry and line the flan tin. Prick pastry with a fork and cook in the oven 200 degree celsius for 10 minutes (can blind bake, but not necessary). Combine ground almonds and caster sugar. Divide mixture in two. Take flan tin out of the oven and cover the bottom of the pastry with strawberry jam, then add ½ of the mixed sugar and almonds. Beat the egg white until stiff and add apples. Put this mixture on the almond and sugar, then add the rest of the almond and sugar. Roll out remaining pastry and cover. Brush with egg white and sprinkle a little sugar on top.
