CHILLED MELON 1 kg ripe, sweet melon, peeled, seeded and chopped 2.5cm piece of ginger, grated 1½ - 2 tbsp white wine vinegar 2 tbsp extra virgin olive oil salt and white pepper 6-7 tbsp ground almonds Put all ingredients in a food processor and liquidize.
